Tra il secondo dopoguerra e la fine degli anni '60 l'industria conserviera italiana, che tra le due guerre si era affermata sui mercati internazionali, dovette adattarsi ai profondi cambiamenti avvenuti nel contesto politico ed economico. L'articolo ricostruisce le fasi principali di questo processo, al cui termine l'iniziativa volta a disciplinare il settore conserviero, e alimentare pił in generale, parte non pił dagli industriali nei loro interessi come era avvenuto negli anni '20, bensì dallo Stato e dalle istituzioni comunitarie europee che dagli anni 1950 e 1960 iniziarono a operare a tutela soprattutto della salute dei consumatori.

Between the Second World War and the late 1960s the Italian preserved foods industry, which had consolidated its position in international markets between the two wars, was forced to adapt to an entirely new political and economic landscape. This article reconstructs the principle phases of this process and how it eventually led the regulatory system of the preserved foods sector, and that of food products in general, to no longer be dictated by the industry itself as was the case in the 1920s, but rather by the State and by European Community institutions which, from the 1950s and 60s, were responsible, above all, for the protection of consumers' health.
